    Mango Black Bean Quesadillas are one of our favorite quick and easy meals. These cheesy, meatless quesadillas only take minutes to make and are great for lunch or dinner.

    Ingredients

    • 1 large mango, diced
    • 1 cup black beans, rinsed and drained
    • 1/2 cup diced red bell pepper, seeds removed
    • 1 large avocado, diced
    • 2 green onions, chopped
    • 1/2 jalapeño, seeds removed and minced
    • 1/4 cup chopped cilantro
    • Juice of 1 large lime
    • Salt and black pepper, to taste
    • 4 flour tortillas
    • 1 cup shredded Pepper Jack Cheese or Mexican blend cheese
